Quick Look:
- Prep Time: 10 minutes
- Cook Time: 3–7 hours
- Serves: 6–8
Ingredients:
- 2 lbs boneless, skinless chicken breasts
- Salt and black pepper, to taste
- ½ cup chicken broth (preferably organic)
- 3 stalks celery, very finely chopped
- 2 (8 oz) packages cream cheese
- ¾ cup Frank’s RedHot or similar hot sauce
- 1 small jalapeño, finely minced
- 6 oz crumbled blue cheese, divided
- 1 cup shredded mozzarella cheese
Optional Garnish:
- Sliced green onions
- Sliced fresh jalapeño
To Serve:
- Celery sticks
- Carrot sticks
- Crackers or crusty bread (optional)
Tip: If the dip thickens too much while warming, stir in a splash of extra broth to loosen it up before serving.
How to Make It:
- Add to the slow cooker:
Season the chicken breasts with salt and pepper, then place them in a 5–6 quart slow cooker. Add chicken broth, celery, cream cheese, hot sauce, minced jalapeño, and 4 oz of the blue cheese. Stir gently to combine. - Cook until tender:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and easy to shred. - Shred & stir in cheese:
About 30 minutes before serving, remove the lid and shred the chicken using two forks right in the crock. Stir in the mozzarella cheese until melted and smooth. Cover and continue to heat until everything is fully combined and gooey. - Garnish & serve:
Just before serving, sprinkle the remaining blue cheese on top. Add sliced green onions or jalapeños if you’d like a little extra color and heat. Keep the dip on warm during your gathering so guests can help themselves.
Serving Ideas:
This dip is bold and rich, so it’s perfect served with:
- Crisp celery sticks
- Crunchy carrot sticks
- Gluten-free crackers
- Toasted baguette slices or crostini
Whether you’re hosting game day or bringing something to a friend’s house, this slow cooker buffalo chicken dip is guaranteed to disappear fast. It’s easy, cheesy, and totally crave-worthy—just the way a great party dip should be.
