Lightly grease a 9x13-inch baking dish with olive oil or cooking spray.
Flatten the chicken (optional but recommended): Place chicken breasts between sheets of parchment and pound to an even 3/4-inch thickness. This helps them cook evenly and stay juicy.
Season the chicken: Pat dry. Rub with olive oil, then season both sides with salt, pepper, and a light sprinkle of Italian seasoning.
Make the “million dollar” topping: In a bowl, mix softened cream cheese, mayonnaise, sour cream, mozzarella, Parmesan, garlic, Italian seasoning, and crushed red pepper if using.
Stir until smooth and well combined.
Assemble: Arrange chicken in the baking dish. Spread the cheese mixture evenly over each piece, going edge to edge so the chicken stays covered.
Add bacon: Sprinkle crumbled bacon over the top. Press lightly so it adheres to the cheesy layer.
Bake: Bake for 22–28 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the topping is melted and bubbly.
Optional broil: For golden, slightly crisp edges, broil 1–2 minutes at the end.
Watch closely.
Finish: Let rest 5 minutes. Garnish with sliced green onions and parsley or chives. Serve hot.
