Ingredients
  

  • 1 cup rolled oats
  • 1 cup coconut milk
  • ¼ cup yogurt Greek or coconut yogurt
  • 1 tbsp chia seeds optional
  • 1 tsp honey or maple syrup optional
  • ½ tsp vanilla extract
  • ½ cup diced strawberries
  • 2 tbsp shredded coconut
  • Pinch of salt
  • Toppings:
  • Fresh sliced strawberries
  • Shredded coconut
  • Honey
  • Granola

Instructions
 

  • Mix oats, coconut milk, yogurt, chia seeds, honey, vanilla, shredded coconut, and salt in a jar. Stir well.
  • Fold in diced strawberries.
  • Seal and refrigerate overnight (or at least 4 hours).
  • In the morning, stir, add toppings, and enjoy!
