  • 1 cup rolled oats
  • 1 cup coconut milk
  • ¼ cup yogurt Greek or coconut yogurt
  • 1 tbsp chia seeds optional
  • 1 tsp honey or maple syrup optional
  • ½ tsp vanilla extract optional
  • ½ cup diced mango
  • Pinch of salt
  • *Toppings*
  • Fresh diced mango
  • Shredded coconut
  • Chia seeds
  • Fresh berries optional

Instructions
 

  • Combine oats, coconut milk, yogurt, chia seeds, honey, vanilla, and salt in a jar. Stir well.
  • Fold in diced mango.
  • Seal and refrigerate overnight (or at least 4 hours).
  • Stir, add toppings, and enjoy!
